[PARSONS ASSIGNMENT] Oxtail Recipe

Today I will be sharing a recipe that I received from my mother! If you’re of West Indian/Caribbean decent or love West Indian food, you have to try this oxtail recipe! I wanted to cook oxtail for dinner, so I called up my mother and she gave me directions on how to make one of my favorite dishes she makes for me. Follow the easy steps below, and view photos of the outcome above.

  1. First, you clean off the oxtail.
  2. Then, put the oxtail in a bowl and season it with salt, pepper, adobo, onion powder, garlic powder and a packet of sazon!
  3. Next, you take a stock pot and put olive oil in the pot. You let the oil get hot, then pour 2 tablespoons of sugar into the pot. When this gets hot, you add in some of the oxtail and fry it. This is called browning. You repeat this until all of your oxtail are brown.
  4. Once brown, you put all of the oxtail back in the pot and pour water on top of it. You cut up an onion and add more salt.
  5. After this, you cover the pot down and let it boil for 2 or 2 1/2 hours – depending on the size of your oxtail.
  6. Once the meat is tender, falling off of the bone. You take a spoon (big spoon) and take them out of the pot.
  7. In another pot, pour some olive oil in the pot, then dice up onion, green pepper, red pepper.
  8. Take out the pieces of oxtail from the boiling water and lay them into this pot. Let it simmer for a little while, and pour some of the water from the seasoned pot you used before this, and pour it into the new pot.
  9. Season to taste. (Put more pepper, adobo, little more Sazon, and a pinch of salt if needed)
  10. At this point, it is finished, but let it cook down for about 10 more minutes. Then you’re done!!

This is a great meal! It tastes even better the next day, doesn’t require you to buy a lot of ingredients and though the boiling process is a bit longer compared to other meals I’ve posted, you can get a lot done while this is cooking. So, for that, it still falls in line with my other recipes!
